Risoles was my favorite Indonesian snack growing up. I'm so glad that my boys like it too. I just wish it is easier to make so I can make this often. Anyway, I was making some last week and planning to save some in the freezer but all are gone within 3 days. My mom' sister made the best risoles I ever taste but as typical older Asian woman she doesn't measure her ingredients just approximate she said. Well, approximate doesn't work well for me. I got to make this a few times to get the result turned out as how she made it. Thank you auntie for the inspiration.

Fold the filling inside the skin like the above picture.

Prepare the breadcrumbs, place it on top of a plate. We like using this panko breadcrumbs instead of the regular one because it is less messy for deep frying

Use one hand to dip the risoles inside egg whites, then use the other one to cover it with breadcrumbs
How to cook Risoles
Deep fry until golden then eat with thousand island dressing and chili sauce. Yummmm

Indonesian Risoles Recipe

Yield: about 16 pieces

It takes a long time to make but totally worth it (according to my sons)


The Filling
  • 1 Tb of oil
  • 200 grams chicken meat - cut into small cubes (1x1 cm)
  • 5 small size shallot, 3 garlic, - minced
  • 2 carrot - cut into small cubes (1/2 x 1/2 cm)
  • 2 onion leaves, cut into small pieces
  • 1.5 cups all-purpose flour
  • 400 ml milk
  • 1/2 cup chicken broth
  • Salt, pepper, sugar - as preferred
  • Cheese, about 2 slices
  • Optional: 2 boiled eggs slice into small pieces
The Skin:
  • 350 grams of all-purpose flour
  • 2 tsp salt
  • 500 ml water + 250 ml milk
  • 3 eggs
  • Oil, enough for making the skin
Other ingredients:
  • Regular breadcrumbs or Panko breadcrumbs
  • 3 egg whites
  • Oil enough for deep frying


How to cook Indonesian Risoles Recipe

To make the filling
  1. Heat the pan, once the pan is hot, add the oil, when the oil is hot, stir fry the garlic, shallots, carrot, and meat.
  2. When the meat is cooked, add the chicken broth, milk, flour. 
  3. Continue cooking, stirring, and adding in the rest of the ingredients. 
  4. Adjust the taste with salt, pepper, and sugar.
To make the skin
  1. In a large mixing bowl, put in all the ingredients except the oil
  2. Whisk until well mixed.
  3. Strain the mixture unto other large bowl
  4. Heat a non-stick skillet
  5. Add a little oil spread it around the pan, then cook the skin like making omelet
  6. Once it's cooked, just flip it over onto a plate.
  7. Repeat the above steps until all the mixture are gone.
Final steps:
  1. Put about one heaping tablespoon of the filing + few slices of the boiled egg onto the skin
  2. Fold it like making envelope 
  3. Use the flour mixture as glue so the folding doesn't unravel
  4. Use one hand to dip the Risoles inside egg whites, then use the other one to cover it with breadcrumbs
  5. Deep fry until golden or spray with olive oil then bake inside 425 degree Fahrenheit for 10 minutes in one side then continue baking for another 15 minutes on the other side.
  6. Eat with your favorite sauce (we like Thousand Island and Thai Sweet Chili Sauce)
