Spaghetti Meatballs Recipe

Like most kids, my boys love spaghetti meatballs. This is one of those quick and easy meals that I cook for their lunch. It's perfect to be paired with french bread and balsamic vinaigrette.

I just finished with my tax filing today. Earlier last year, I decided to switch to free mint.com instead of using Quicken but mint has limited capabilities that frustrated me so I had to bit the bullet; bought the Quicken, and entering all the financial data from last year. After days of working late for days, I am glad that's our tax finally done. Fiuh....

Anyway, the boys went biking at the park with daddy today while I was working on tax. I had about 15 minutes to cook lunch so I decided to make this quick, easy, and fresh meal: Shrimp Scampi with Bacon & Mushroom since I happened to have all the ingredients.
First thing first:
Fry the bacon. I use griddle for easy cleaning then save the fat/ oil for later use.
Set the bacon aside and cut them to small pieces.

The boys are into Garfield books these days. I am not a fan but I let them read those books as long as they are also reading other books that I picked from the library. Anyway, lasagna is Garfield's favorite food so they asked if I can cook it. They pretty much involved in my menu planning nowadays.
I tried to cook it a few times and my boys do not like the ricotta/ cottage cheese so I use sliced Muenster Cheese instead. I called this our family lasagna because we tweak the recipe according to our preference. If you are looking for the real classic lasagna please do not follow this recipe but if you trust our taste then please give it a try. :)
