Our Daily Fruits & Veggie Juice

Inspired by my mom, we have been making fruit and veggie juice. A friend of mine, Eve shared how celery juice helps her daughter skin heal from eczema. So we gave it a try to see if it would help heal Max's eczema. However, straight celery juice is too bitter for us, so we combine it with other veggies and fruits. 


The boys are old enough now that they can manage to make it on their own, even mop the floor after they are done making juice. 


Fruit & Veggie Juice
Ingredients:
6-8 large carrots
1-2 bunches of celery
2-3 beets
1/3 pineapple (the middle and some meat parts)
2-3 apples
3 oranges 

Directions:
Peel, cut into smaller chunks, then juice with juicer.

We recently replaced our cheap Hamilton juicer with Omega Juicer, which extracts more juice, takes up less space, is quieter, and easier to clean.

 How to make cold brew iced coffee
A few years ago my friend, Myrna shared with me a cup of cold brew coffee she made. It was perfect. She used the Pioneer Woman's recipe. The next morning and every morning after, I  almost always start my day with a cup of cold brew coffee. During cold season, I would skip the ice and warm up the coffee in the microwave.

The ingredients:

Mix the ground coffee with water in a large container then leave it in the room temperature for 12 hours.

Homemade Green Smoothies / Popsicles

I first heard about green smoothies from my neighbor Silvi. She told me that all I have to do is adding a handful of spinach when I make smoothies. I was worried about the taste but she convinced me that I won't even taste the spinach and she was right. The best part is seeing my boys consuming veggies enthusiastically.

Strawberry Lemonade

Our go to drink for party or gathering so easy to make and refreshing especially during hot summer days. Plus, who doesn't like Strawberry Lemonade?

First thing first, prepare the lemons: by cutting them in halves
then squeeze the juice out. I use strainer so the seeds don't go into the lemonade 

When I am short on time or couldn't find lemons at the grocery, I use Lemonade Concentrate instead. This one is my favorite found at Trader Joe's:
