I usually add celery and carrot to make it "healthier."
So who want some spaghetti meatballs?
Spaghetti Meatballs
Ingredients:
1 package spaghetti - cook according to package directions, I usually add 1 tablespoon of oil and 1 teaspoon of salt in the boiling water.
2 tbs olive oil
1 small (or 1/2 big) yellow onion - chopped
4 cloves of garlic, minced
1 Portobello mushroom or 1/2 package of regular mushroom
1 bottle pasta sauce, I use the marinara and basil from Trader Joe's
2 sticks of celery and/or carrots, dice
1/2 can chicken broth
2 teaspoon (or more as prefer) sugar
4 ounces of shreded cheese
+/- 20 Meatballs: I use the Chef Bruce Aidells Meatballs, I use Aidells Chicken Teriyaki Pineapple Meatballs
Parmesan Cheese
Salt & pepper
Directions:
Heat the olive oil, add the onion saute 'till translucent.
Add in the garlic, mushroom.
Once the mushroom is cooked, add the chicken broth, celery, carrots, and pasta sauce. Lower the heat when it's boiling. Add salt, pepper, sugar to taste.
Let it simmer for about 10 minutes. Stir in the cooked pasta.
Sprinkle Parmesan Cheese on top when you're ready to eat.
