Our family love this simple dish. I especially love the fact that it's healthy and super easy to make. I love making this for gathering as well because it's quick and easy to make.
The process:
Cut the carrots and potatoes into small squares, then place them inside a big mixing bowl:
Add the rest of the ingredients:
Place them in a single layer on a baking sheet lined with parchment paper.
Bake in the oven for about 30 minutes and they are ready to be eaten. :)

Roasted Potatoes and Carrots
Ingredients:
4 gold or russet potatoes cut into 1 inch cubes
2 carrot {cut into 3 inches sticks}
2 to 3 tablespoon olive oil
1 tablespoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
Salt & pepper
Directions:
Heat the oven to 450 degree Fahrenheit. Line baking sheet with parchment paper.
In a big mixing bowl, add the rest of the ingredients and mix together until evenly coated.
Place them in a single layer on the lined baking sheet
Roast the vegetables for 25 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.
