Our family love El Pollo Loco Chicken so I challenged my self to make the homemade version with organic chicken. A few weeks ago I shared some of this chicken with my neighbor and she said her picky eater son like it a lot. Yayyyy
First thing first:
Season the chicken with plenty of salt and pepper. I also add dashes of Old Bay Seasoning
then brown chicken on skin side for about 5 minutes (this can get pretty messy with the oil splatting all over so you may want to do it outside)
Transfer chicken, skin side up, to a baking dish and bake until thickest part registers 160 degree Fahrenheit on thermometer, about 15-20 min.
Enjoy with roasted potatoes and carrot. :)

ingredients:
- 6 chicken thighs
- Salt and ground black pepper (as prefer)
- Old bay Seasoning
- 2 tablespoon fresh lemon juice
- 1 garlic clove, minced
- 1 teaspoon minced fresh thyme
- Olive oil

How to cook Crispy Baked Chicken
- Trim the fat and excess skin from the chicken
- Place chicken on a container, season with salt, pepper, and Old Bay Seasoning. Leave it inside the refrigerator for at least one hour.
- Heat oven to 450 degree Fahrenheit
- Heat 1 tablespoon oil in a skillet over medium-high heat until just smoking. Brown chicken well on the skin side for about 5 minutes.
- Transfer chicken, skin side up, to a baking dish and bake until thickest part registers 160 degree Fahrenheit on an instant-read thermometer, about 15-20 minutes.
- Whisk 2 tablespoon olive oil, lemon juice, garlic, thyme together.
- Drizzle oil over chicken before serving.
