Lemongrass Chicken

My sister in law cooked this for us when we visited them last year. I love it and like it even more when I learned it's easy to make and can be frozen.

The ingredients:

bruise the lemongrass with mortar and pestle, rolling pin, or other such thing

put all the ingredients into Ziplock bag, zip, and mix them up


Afterward, either marinate overnight in the fridge or freeze them for days when we don't have time to cook dinner
 

the grill, pan fried, or bake them in the oven


Enjoy with rice

Ingredients:
about 2 pounds chicken cut into pieces
4 tablespoons sweet soy sauce
1 stalk of lemongrass - cut into 3 pieces, bruise {see picture above}
1 Tb Worcestershire sauce or fish sauce
Juice from 1 lime/ lemon
1 Tb butter - melted
Minced ingredients:
2 cloves of garlic
3 shallots
1/2 teaspoon ground coriander
Salt and pepper

Direction:
Put the chicken inside a Ziploc bag then add the rest of the ingredients, mix well
Let it marinate overnight inside a refrigerator or Freeze until you are ready to use it
Grill until cooked or Bake in the preheated 400 degree Fahrenheit for about 30 minutes, then broil for 10 minutes
