Crispy Baked Chicken

Our family love El Pollo Loco Chicken so I challenged my self to make the homemade version with organic chicken. A few weeks ago I shared some of this chicken with my neighbor and she said her picky eater son like it a lot. Yayyyy

First thing first:
Season the chicken with plenty of salt and pepper. I also add dashes of Old Bay Seasoning
then brown chicken on skin side for about 5 minutes (this can get pretty messy with the oil splatting all over so you may want to do it outside)
Transfer chicken, skin side up, to a baking dish and bake until thickest part registers 160 degrees Fahrenheit on thermometer, about 15-20 min.

Roasted Chicken's Ingredients:
6 chicken thighs
Salt and ground black pepper (as prefer)
Old bay Seasoning (optional)
2 tablespoon fresh lemon juice
1 garlic clove, minced
1 teaspoon minced fresh thyme
Olive oil

Directions:
1.    Adjust the oven rack to lowest position and heat oven to 450 degree Fahrenheit
2.   Season the chicken with salt, pepper, and Old Bay Seasoning
3.   Heat 1 tablespoon oil in a skillet over medium-high heat until just smoking. Brown chicken well on the skin side for about 5 minutes.
4.   Transfer chicken, skin side up, to a baking dish and bake until thickest part registers 320 Fahrenheit on an instant-read thermometer, about 15-20 min.
5.   Whisk 2 tablespoon olive oil, lemon juice, garlic, thyme together. 
6.   Drizzle oil over chicken before serving.
