Basic Sweet Bread Recipe

I have been making homemade bread ever since Max was a toddler. Can't believe it's been almost 8 years now.  This little boy is not so little any more.
 

I tried many different recipes and methods over the years to make bread that taste good, easy to make, and enough to feed my family breakfast for a few days.

I used to use kitchen aid with the dough attachment to knead the dough until I found Zojirushi breadmaker for 1/2 price on Craigslist. I prefer breadmaker because I can just dump the ingredients and leave. The breadmaker will turn off by itself once it's done kneading so I don't have to "babysit" it. 

After the kneading, I let the dough proof inside the breadmaker for an hour or so. If using kitchen aid then cover the dough with kitchen towel and let it proof until it doubles in size.
Divide the dough into about 55 grams small buns then start shaping and filling each one with any filling you like.


Then let them proof the second time and bake in the oven for 15 to 18 minutes. You can make any bread you want with this basic dough from banana chocolate buns,

sausage buns,

Fluffy and soft sweet bread recipe

Ingredients:

  • 250 ml warm whole milk
  • 2 teaspoons yeast
  • 500 grams bread flour + more for dusting
  • 70 grams sugar
  • a pinch of salt
  • 1 whole egg + 1 egg yolk - lightly beaten (use the left over egg white for brushing later)
  • 40 grams butter - softened

Instructions:

  1. Place the ingredients, in the order listed, inside a bread machine set on dough cycle (or kitchen aid with a dough hook attachment set at speed 1 for 30 minutes).
  2. Cover the mixing bowl with a cloth napkins then leave it in a warm place. I put mine inside a preheated 200 degree Fahrenheit oven, turn it off. Let the dough proof inside the warm oven for one hour.
  3. Dust your working space with flour, Punch the air out, divide the dough into about 60 grams bun.
  4. Take one portion, flatten it out with hand or rolling pin. Insert any filling you prefer then wrap up the filling. Let it proof for another hour in a warm place.
  5. After the buns are ready to be baked, brush the dough with left over egg whites.
  6. Bake at preheated 350 Fahrenheit oven for about 15-18 minutes or until the buns are golden brown
