This is a slightly modified version of Banana Chocolate Chips Muffins, the first thing I ever bake taught by my the talented baker friend, Bertha. I replaced some flour with oatmeal since I love the chewy oatmeal texture in a muffin.
This is also a great simple recipe to work on with kids. My 6 and 3 years old can bake this with only a little help for me.
Didi was working on the mixture a while Koko was working on mixture b.
Combine both mixture in a big mixing bowl
Stir to combine all the ingredients:
Place baking paper on the muffin pan:
Scoop the batter, divide among the cups and bake in oven
about 20 minutes later: Voila....
Banana Chocolate Chips Oatmeal Muffins:
Yield 12 cups regular muffin pan
Ingredients:
3 medium size ripe bananas
1/4 cup sugar {add more if you have a sweet tooth}
1/2 cup melted butter
1 tsp vanilla extract
1 egg
1 egg
1 cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
Pinch of salt
3/4 cup dark Chocolate Chips {or 1/2 frozen blueberries, 1/2 dark chocolate chips}
Directions:
a.
Preheat the oven to
350 Fahrenheit.
b.
In one bowl, mash with
fork the bananas, sugar, melted butter, vanilla extract, and egg.
c.
In another bowl, mix
the flour, baking powder, baking soda, and salt.
d.
Combine ingredients in
both bowl. Add the oats and chocolate chip then stir them together with wooden
spatula.
e.
Use cookie scoop to
put the batter into lined muffin pan.
f.
Bake in preheated oven
until golden brown or about 20-22 minutes
