I grew up eating this cookies. Every time we go back to Indonesia we always brought some boxes but they only last for a few weeks. So I decided to make it myself. After many not so successful attempts, I ended up with this recipe which won my hubby and kids' approval. Mission accomplished!
I adapted the recipe using ingredients easy to find in the U.S.
The tedious process of molding the cookies one by one:
Glazing each one with egg yolk before baking them in the oven
Twenty minutes five later: Ta-da!

Indonesian Pineapple Cookies a.k.a Nastar

Melt in your mouth pineapple cookies

Ingredients:

Pineapple Jam ingredients:
  • 1 pineapple, cut off the skin and inner spikes, cut into 1 inch square (about 500 gr pineapple chunks)
  • 1 teaspoon vanilla extract
  • 100 grams sugar
  • dash of ground cinnamon
  • 2 cloves
Cookies Ingredients:
  • 250 grams unsalted butter at room temperature
  • 50 grams powdered sugar
  • 3 egg yolks
  • 250 all-purpose flour
  • 50 gr corn starch
  • 2 Tbs milk powder
For the glaze:
  • About 1 teaspoon of cookies ingredients + 3 egg yolks, mix with fork

Instructions:

To make pineapple jam:
  1. Puree the pineapple using food processor or blender.
  2. Place all ingredients inside a non-stick pan. Heat the pan in medium heat until boiling while stirring with wooden spatula.
  3. Turn own the heat to low then continue stirring occasionally until the mixture turned into gel-like texture (about 30+ minutes)
  4. Let it cools, place it inside a container then refrigerate until you are ready to make the rest of the cookies.
To make the cookies:
  1. Place dry ingredients: flour, corn starch, and milk powder in a bowl, mix with wooden spatula. Set aside
  2. Using an electronic mixer, mix the butter and sugar until pale white
  3. Add the egg yolks one by one while continue mixing it.
  4. Turn off the mixer, add the dry ingredients then mix them all with wooden spatula.
  5. Heat the oven to 300 degree Fahrenheit. Prepare a cookie pan lined with parchment paper
  6. Take a small amount (about 7 grams), place it in your hand, and shape it into small ball.
  7. Make a small hole, place the jam inside, close up the hold by pinching the dough.
  8. Place them on the cookie pan.
  9. Glaze the top of each one cookie with glaze mixture
  10. Bake in the preheated oven for 25-30 minutes
