I have been hearing about the tanzhong/ water roux method for years but most of the recipes I found were either in other language that I don't understand or the ingredients measurement was either too much or too little for my bread machine {I have the Zojirushi one from craigslist}, which didn't yield a great result when I tried it on the past.

However, I started seeing home breads made with this method on Instagram a few days ago. So I gathered my courage and giving this a try again. After reviewing many recipes, I went with the dessert first girl's recipe. I made a slight chance and use bread maker instead of kitchen aid. Before I went to bed; I made the water roux and placing all the ingredients in the bread maker. The next morning, I was greeted with this lovely loaf of bread inside the bread maker. Voilaaaa

Let's back up a little bit. First, I worked on the water roux (tanzhong) by whisking flour and milk together in a small pan over medium heat.

Once the water roux is cooled, place warm milk and yeast inside the bread machine followed by the rest of the ingredients. Choose the light crust version and let the bread machine works its magic from start to finish.

*Update: We don't like the thick crust of the bread when I bake it in the bread maker; so now I just have the bread maker do the kneading, let it rises for about one hour, then I shape the dough, place it inside a bread pan, let it rise again until double in size, then bake it in the 350 degree Fahrenheit oven for 30 minutes.

The critics aka my kids said, "It's just like the store one, ma." Woohoo mission accomplished!

The only con is because I used bread machine from start to finish; the crust is bit darker/ more burned than if I bake it with oven. Maybe one day when I have a loaf pan, I would bake it in the oven.

Tanzhong Loaf Bread with Bread Machine
Water roux (tanzhong) ingredients:
25 gr bread flour
100 ml whole milk

Other ingredients:
125 ml warm whole milk
2 tsp active dry yeast
350 bread flour
60 gr sugar
1 tsp salt
1 egg
30 gr unsalted butter

Directions:
For water roux (tanzhong):
Place flour and milk in a small pan the pan. Heat the pan over low to medium heat.
Cook while whisking constantly until the mixture is thicken, about 3-5 minutes.
Let it cooled.

For the bread:
Place the warmed milk and yeast inside the bread maker. Leave it for about 2 minutes before dumping the rest of the ingredients including water roux (tanzhong) inside.
Set the bread maker setting to make a bread with “light crust” option.
My bread maker knead and bake it for about 3 hours from start to finish.

*Update: now I just use the bread maker to do the kneading part. Let the dough rise for about one hour. I then shape the dough, place it inside a bread pan. Let it rise again until double in size then bake it in the 350 degree Fahrenheit oven for 30 minutes.
