Cooking Chicken Soup with Instapot

I don't know about you but hearty chicken soup is one of those meals I long for when I am not feeling well, when the weather is cold, or whenever I miss home. Unfortunately, my chicken soup is not the same kind that my husband grew up eating. "There's something missing," he said and he didn't know what it was. Until last month when we went home to Indonesia, my sister in law was cooking chicken soup and my hubby tasted it. He told me that's it tasted the same as chicken soup his mom used to cook. We finally figured out the  missing ingredient: candlenut, a nut commonly used in Indonesian cooking. This is optional ingredient though. I didn't use it for years and the soup taste just fine.

Ingredients:
chicken with bones, carrots, potatoes, salt, and white pepper chicken soup recipe
Three main spices: shallots, garlic

and candlenut

mince/ grind them chicken soup recipe
While the chicken is cooking in the pot, stir fry the minced spices until fragrant

Add them to the pot with the soup plus potatoes and carrots. Season with salt and pepper as prefer. Enjoy!

Homemade Chicken Soup
Ingredients:
Chicken with bones (I used Cornish Hen)
Carrots, peeled and cut into small pieces
Potatoes, peeled and diced
1 Tablespoon vegetable oil
5 garlic, minced
1 large shallots, minced 
5 candlenuts (optional), minced
Salt and white pepper 

Directions:
Cut the chicken into small pieces
Place the chicken inside an Instapot or pressure cooker. Add water to fill about 2/3 of the pot.
If using Instapot, press the "soup" setting and let it cook until it's done or about 45 minutes if using regular pressure cooker.
While the chicken and soup is cooked, heat a small pan, add the oil, once the oil is hot, add the minced garlic, shallots, and candle nuts. Cook until fragrant then set aside.
When the soup is done cooking, release the pressure, open the lid, and then add the rest of the ingredient. 
Turn the Instapot back on, keep cooking until the veggies is cooked, about 10 minutes or so.
Adjust the taste as prefer with salt and pepper.
