One of the reason I bake is because most of the store bought cookies or cakes are too sweet to my taste. So if you have a sweet tooth, you may want to add the amount of sugar or chocolate chips on this recipe. We rarely bake cookies except during winter time to be enjoyed with hot chocolate, milk, coffee, or tea; the choice is yours.
First thing first, the ingredients: I use dark chocolate chips instead of the regular semi sweet chocolate chips on mine.

Chocolate Chips Cookies

1/2 cup (1 stick) of butter, softened
70 grams brown sugar
30 grams granulated sugar
1 egg
180 grams all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract
2 teaspoons instant coffee powder
1/2 to 2/3 cup (depends on whether you prefer less or more) chocolate chips
Directions:
Adjust the oven rack to the middle position and heat oven to 350 degrees
Put the dry ingredients together in a big bowl: flour, baking powder, instant coffee powder and salt
In the mixing bowl, mix together using electric mixer with flat beater on medium speed: butter and both sugars for about 30 seconds. Then beat the eggs and vanilla extract, for another 30 seconds
Shift together the dry ingredients into the mixing bowl then mix them together on low speed then add the chocolate chip and stir again.
Drop cookie dough about 2 tablespoon measure onto a greased cookie sheet about 2 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle.
Bake for about 15 minutes. Bake a little longer for a crispier cookie or a little shorter if you prefer a chewy one.
