
We call it 'Acar Timun' in Indonesia. I just learned that many people call this Thai Cucumber Relish. It serves as condiment to main dish or quick vegetable side dish that I often make whenever I ran out of time.
The ingredients:
Some prefer to eat cucumber with its skin. I prefer to peel it off...
then cut them out into small cubes.
I happened to have these lovely grape tomatoes from the Farmer Market so take a cup and cut them in half
Add the rest of the ingredients and mix them up with spoon or wooden spatula.

Thai Cucumber Relish

Ingredients:
1 cucumber - diced
1 cup of grape tomatoes - halved
1 shallot - minced
1 Thai pepper - diced
1 tablespoon vinegar
2 tablespoons sugar
1 tablespoon squeezed lime/ lemon juice
Pinch of salt
Directions
Place all of the above ingredients in a bowl
Gently mix them up with spoon or wooden spatula
Let it cools in the refrigerator for 20 minutes before eating them.
