Stir Fry Tempeh

I'm thankful for new and old friends that God has brought into my life. A family friend just moved to our town about a year ago. She cooked this dish one day on a play-date and I couldn't stop eating it. Thankfully, she also shared the recipe so now I can make it our own. Thank you, Mei!

The Ingredients:



The main cast: 2 packs of tempeh. {I bought mine from Wholefoods}


Cut into rectangular shape about 1 x 1.5 inch


Deep fry or bake in the 400 degree Fahrenheit for 10 minutes in one side then 10 minutes on the other side or until golden brown.
 
Stir fry the garlic and onion

add the rest of the ingredients:

add baked/ deep fried tempeh at the end. Continue stir frying until well mixed

Stir-Fried Tempeh {Oseng-oseng tempeh}

Ingredients:
2 shallots, minced
1 clove of garlic, minced
1 tomatoes, cut into small squares
1 lemongrass, cut about 2 inch in length
2 packages of Tempeh, cut into rectangular shape about 1 x 1.5 inch
Tamarind - 1/2 teaspoon, soaked in 2 tablespoon hot water
Sweet soy sauce about 4 tablespoons
Salt and pepper as prefer
about 2 tablespoons water
optional: dried anchovies 1 tablespoon 

Method:
1.      Deep fry the tempeh until golden brown. {or Bake at 400 Fahrenheit for 10 minutes on one side then another 10 minutes on the other side} Set aside.

2.      Heat the wok or sauté pan, add 2 tablespoons of vegetable oil, add the shallot, garlic, lemongrass, and tomatoes. Stir fry until fragrant.

3.      Add the anchovies, tempeh, sweet soy sauce, salt and pepper, water. Stir fry for another couple of minutes. That's it.

Enjoy with rice and chili.
