Fail-proof Banana Bread Recipe

I wasn't a fan of banana bread before until I tasted the one that my mentor made. She kindly shared her recipe with me, which I've tested for many many times. I only made a little change by reducing the amount of sugar and adding blueberries. If you never make banana bread before, give this recipe a try and you wouldn't want to buy from the store again. 


Yield: one 9"x5" loaf pan

Fail-proof Banana Bread Recipe

Easy no mixer needed banana bread

Ingredients:

  • ½ cup butter, melted
  • 1 egg
  • 1/4 cup white sugar
  • 1/4 cup brown sugar 
  • 1 teaspoon vanilla extract
  • ¾ cups all-purpose flour
  • ½ cup sour cream or plain yogurt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • a dash of salt
  • 2 medium bananas, mashed
  • ½ cup bitter sweet chocolate chips or blueberry 
  • ½ cup chopped walnuts (optional)

Instructions:

  1. Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan with butter.
  2. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well.
  3. In another large bowl, combine the flour, baking soda, baking powder, and salt.
  4. Stir into the butter mixture and mix them until smooth.
  5. Finally, fold in the sour cream, walnuts/ berries/ chocolate, and bananas. Spread evenly into the prepared pan.
  6. Bake at 350 degrees Fahrenheit for about 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Cool loaf in the pan for 30 minutes before removing to a wire rack to cool completely.
