Worcestershire Sauce Chicken

This is one of the most popular home-cooked chicken dish in Indonesia and our family favorite. We call it "Ayam Saos Inggris" in Indonesia.  Over the years, I have been trying different ways and ingredients before finally settle with this one. Instead of deep frying like the way it is usually cooked, I just brown the chicken for about 3 to 5 minutes on each side.


The ingredients: Blue Band is the famous Indonesian brand margarine but lately I have been using regular butter instead.

Worcestershire Sauce Chicken
Ingredients:
1 pound skin-on chicken drumsticks, thighs, and/or wings
4 cloves of garlic - minced
Salt and pepper
1 tablespoon vegetable oil
1 yellow onion or large shallot - chopped
2 Tbs Chinese cooking wine
4 tablespoons sweet soy sauce
4 tablespoons Worcestershire sauce
2 tablespoons butter
1 tablespoon oyster sauce
1 inch piece fresh ginger, peeled, and thinly sliced
kafir lime leaves
1 stalk of green onion, cut into small pieces
Juice from 1 lime/ lemon

Directions:
Marinate the chicken with minced garlic, salt and pepper, leave it in the fridge for about hour 
Heat your stir frying pan, Once the pan is hot add in the vegetable oil. When it is start smoking, brown marinated chicken well on each side for about 3 to 5 minutes. Take out the chicken and place it in a plate.
Reheat the pan, add butter and onion/ shallot. Cook 'till fragrant.
Add the chicken and the rest of ingredients except the green onion and lime/ lemon juice. Reduce the heat to a simmer.
Continue stirring until all the ingredients are well mixed and the chicken is cooked through, about 10 minutes. Stir in green onion and remove from heat. 

optional: Broil in the oven for 3 minutes or until the top is slightly burned

Add lime/lemon juice.
Eat with rice and chili {totally optional}
